Canned Spaghetti Sauce

30 pounds of tomatoes - scald, peel and dice. (Place in strainer to drain some of the juice if you want a thicker sauce)
1 Cup onion, chopped*
5 cloves garlic, minced
1 Cup celery, chopped*
4 green peppers, chopped*
1 pound mushrooms, sliced*
2 Tbs canning salt
2 tsp. pepper
2 Tbs oregano
1/4 Cup parsley
1/4 Cup brown sugar
(* do not increase these porportions!)

Bring to boil, boil for 20 minutes. Reduce heat to simmer, simmer to desired consistency. Pour into mason jars and process in pressure canner.

Process at 10 lbs (adjust for your altitude)
pints - 20 min.
quarts - 25 min.

I have added tomato sauce to the ingredients to help thicken it, or you can add a can when you prepare it for a meal. You can also add extra spices -to your taste- when you prep it for a meal. I usually add extra oregano, basil, and garlic powder - cinnamon is a nice addition too. You can also throw in a package of spaghetti seasoning to add even more flavor. Sauce taste good with ground sausage too. Experiment to find what you like best, also works nice for lasagna.
