Kool-aid Play-dough

2 1/2 cups flour
1/2 cup salt
2 packages kool-aid (flavor determines color)
1 teaspoon cream of tarter (optional)
2 cups boiling water
3 Tbs oil

1. Mix dry ingredients together

2. Knead until smooth (careful - it's hot! It may take a few minutes before you can ditch the spoon & get your hands in there.)

3. Let it cool and then store in a ziplock bag. Sealing bag while still warm will cause condensation in the bag and make the dough too sticky.

Chicken Parmesan Nuggets

Serves 4
Ingredients
2 chicken breasts, diced into 20 pieces
1/4 cup all-purpose flour
1/2 tsp garlic powder
1/2 tsp salt
2 eggs, whisked
1 cup panko Japanese breadcrumbs
1 tsp dried oregano
1 cup Parmigiano-Reggiano or Parmesan cheese, shredded
Favorite marinara sauce
Directions
Preheat the oven to 400 degrees F and line a baking sheet with foil. Spray lightly with nonstick cooking spray; set aside.
Set up an assembly line using 3 bowls. Fill one with flour, 1/4 teaspoon garlic powder and 1/4 teaspoon salt; mix. In another bowl, add the whisked eggs. In the remaining bowl, mix together the panko, 1/4 teaspoon garlic powder, 1/4 salt, oregano and cheese.
Toss the diced chicken in flour and shake off the excess. Then coat with egg and bread with the panko mixture.
Place the breaded chicken on the baking sheet and bake for 20 minutes. Finish browning under the broiler for 2-4 minutes, flipping halfway through.
Serve with marinara sauce.

Pizza Rolls

Pizza dough
Sausage
Pepperoni
Mushrooms
Green Peppers
Onions
Shredded Mozzarella
Butter, melted
Grated Parmesan Cheese
Bread Crumbs
Pizza Sauce


Roll dough out until 1/4 inch thick. Cut into small squares, about 3 inch by 3 inch. Inside each square, load with pizza toppings of your choice and shredded mozzarella. Pinch the corners together and place them seam down on a sprayed 9X13 pan. Once pan is filled, brush the tops with butter and sprinkle with parmesan cheese and bread crumbs.

Bake at 350 degrees for 20-30 minutes. Serve with warm pizza sauce to dip in and green salad.

Mac and Cheese

{Mac and Cheese}

serves 4

4-5 cups whole wheat elbow macaroni noodles, cooked according to package, drained
2 1/2 cups 1% milk
1/4 cup flour
1/4 tsp salt [or to taste]
1/4 tsp fresh ground pepper [or to taste]
1/4 cup parmigiano reggiano cheese, grated
1/4 cup sharp cheddar cheese, grated [I prefer tillamook brand]

place milk in medium saucepan and bring almost to a boil. Slowly whisk in flour, salt, pepper, and whisk as the sauce begins to thicken. When sauce thickens, remove from heat and add cheese. Stir until cheese is melted.

Pour over noodles until the amount of sauce is how you like the noodles, stir and serve with fresh fruit!
