Cracker Dips

Pepper Jelly Dip

1 pkg of Cream Cheese, Softened
Pepper Jelly

Pour desired amount of Pepper Jelly over Cream Cheese


Apricot Dip

Apricot or Fig Preserves
1 pkg Cream Cheese or Goat Cheese
Crushed Almonds, roasted and salted
Diced Dried apricots
Honey

Spread preserves on the bottom of plate, Put Cream Cheese on top and sprinkle crushed almonds and dried apricots on top. Then drizzle with a little honey.

Roasted Red Pepper Hummus

4 C chick peas (soak overnight and boil until tender)
3/4 C Lemon juice
1 tsp Salt
1/4 tsp garlic powder
2 cloves garlic
1/2 of roasted skin off red pepper

Put all in food processor and enjoy.

Restaurant-Style Ranch Dressing



Recipe from Our Best Bites, inspired by Kneaders Bakery
1 cup mayonnaise or light mayonnaise (not Miracle Whip)
1/2 cup Greek yogurt or sour cream
1/2 cup buttermilk
1 packet Hidden Valley Ranch dressing mix
Instructions:
Whisk ingredients together. Serve as a salad dressing or dip for vegetables. Refrigerate any leftovers.

Cowboy Caviar

2 cans shoe-peg corn or 1 can white corn, drained
1 can black eyed peas, drained
2 tomatoes, chopped
1/2 bunch cilantro, chopped
1 bunch green onion, thinly sliced
2 cloves garlic, minced
2 avocados, chopped

Dressing:

2 tsp. cumin
1/4 tsp. pepper
3/4 tsp. salt
1/4 cup red wine vinegar
1/4 cup olive oil or grape-seed oil

Mix dressing ingredients and wish until incorporated. Add all other ingredients. Chill. servie with corn chips - scoops work great!

Guacamole

3 Haas avocados, halved, seeded and peeled
1 lime, juiced
1/2 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon cayenne
1/2 medium onion, diced
2 Roma tomatoes, seeded and diced
1 tablespoon chopped cilantro
1 clove garlic, minced

In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Drain, and reserve the lime juice, after all of the avocados have been coated. Using a potato masher add the salt, cumin, and cayenne and mash. Then, fold in the onions, tomatoes, cilantro, and garlic. Add 1 tablespoon of the reserved lime juice. Let sit at room temperature for 1 hour and then serve.

Pineapple Cracker Dip

2 pkg. cream cheese, softened
15 oz can crushed pineapple (drained)
1 green onion, finely sliced
1 green pepper, finely sliced

Mix all ingredients and top with pecans

Serve with wheat thins

Cheese Cracker Dip

1 pkg. Cream Cheese, softened
1 jar old English American cheese
1 jar old English American cheese with bacon
1 tsp. Worcestershire's sauce
1 green onion, thinly sliced

Mix all ingredients and top with walnuts.

Serve with Ritz crackers
